“Sabudana Ki Pakora” are a type of deep fried appetizers. Pakoras are pretty common in India but these are made out of tapioca and coconut which gives these really unique flavor and texture. We highly recommend you try these out as your friends and family are sure to love them.

- Prep Time: 3-4 hours (waiting period), 15 minutes mix and prep
- Cook Time: 5-10 minutes

Ingredients:
- 1 cup of Sabudana (Pearl Tapioca)
- 3 cups of plain yogurt (regular or lowfat)
- 1 cup of water
- 3 cups of rice flour
- 1 cup of shredded coconut
- 1 cup of water
- 3 tablespoon of green chutney
- 2 teaspoon of salt or to taste
- 2 chopped green chili
- 1 bunch of chopped green cilantro
- 1 chopped onion
Cooking Instructions:
- Add sabudana, plain yogurt, and a cup of water to a bowl. Gently mix.
- Let it sit at room temperature for 3-4 hours in order for the sabudana/tapioca to expand. The colder the weather the more time it needs to sit out.
- Add rice flour. Add coconut. Mix.
- Add green chutney, salt, and green chilies. Add approximately one more cup of water or as needed.
- Let it sit for another 30-45 minutes so the dough can settle.
- Fill frying pan with oil and heat it up with high heat for 3-5 minutes.
- Test the oil by adding a little bit of dough. If it floats easy to the top, then you are ready to cook. Once the oil is hot, you can turn it down to medium heat.
- Add little balls of dough the frying pan. Fry for approximately 5 minutes until dough turns golden.
- Serve with green chutney. Enjoy!
