Indian Vegetarian Recipes: Semee Ahloo aka Potatoes and Flat Green Beans

Semee Ahloo literally translates to flat green beans and potatoes. This is one of the many easy Indian recipes that’s great for vegetarians.

  • Prep Time: 15 minutes
  • Cook Time: 35 minutes
  • Total Time: 50 minutes

Ingredients:

  • 1 lb of flat green beans
  • 5 potatoes
  • 4 garlic cloves
  • 1 teaspoon red chili powder
  • 2 tablespoons of cumin seeds
  • 2 dashes of salt or to your taste
  • 2 tablespoons of olive oil or corn oil
  • 1 lemon or lime (optional)

Cooking Instructions:

  1. Take out the stems of the flat green beans. Chop up the green beans into medium pieces.
  2. Peel potatoes. Then, chop them into medium sized pieces.
  3. Put the chopped up green beans and potatoes in separate bowls. Immerse them with water so they remain fresh.
  4. Peel garlic cloves. Cut the cloves in smaller pieces.
  5. Add oil to a pan.
  6. Add the garlic cloves. Fry them for 2-3 minutes until they start turning brown.
  7. Add cumin seeds. Stir.
  8. Drain the potatoes and green beans. Then, add both to the frying pan. Mix well.
  9. Add red chili.
  10. Add salt.
  11. Cook for 3-5 minutes on high heat with the lid off to evaporate water from the vegetables.
  12. Cook for another 20-25 minutes on low heat with the lid on. Cook longer if needed. Potatoes will be tender once the dish is done cooking.
  13. Squeeze lemon on top if you’d like. Serve with an Indian bread like chapatti or naan.
